
This toast is the perfect pick — whether you need a quick, nutritious eat-and-go before school, or you’re soaking up the sunshine with breakfast in the garden. Either way, it’s got you covered.
Ingredients
Half a avocado
Any bread you like - I used the Halkidiki & Kalamata Olive Batard from Tesco
Houmous
Rocket
Lemon
Olive oil
Seasoning - I used the Avocado Topping from Just Spices

Method
First - Toast your bread, personally I HATE having char on my toast so I put my bread into the air fryer, this gives it the right amount of crunch without any black.
Second - Get your freshly toasted bread and spread your Houmous on top, with the back of a spoon or butter knife.
Third - Add a good amount of Rocket on top of your toast with a pulling motion so that it doesn't clump up.
Fourth - Take your avocado, cut it in half and take out the pit, after this cut the avocado into strips length ways, the same way you can see it in the photo above, then place it on top.
Fifth - Add your seasonings a drizzle of olive oil and a squeeze of lemon and your done.
