Ingredients
1 can of chickpeas
Olive oil
Spices (a few pinches of):
Smoked paprika
Cumin
Garlic powder
onion powder
Chilli flakes
1/2 Carrot
1/2 Red Cabbage
1/2 White Cabbage
Lime juice
2 Avocado
1/5 Tomato
5 tbs Mayo
1/2 a big onion or 1 small one
4 Mini Tortillas
A sprinkle of Coriander
Method
1. Add your washed dried chickpeas to a baking tray add seasoning mix (in the ingredients list) a drizzle of olive oil and mix together - then bake at 220 Celsius for 15-20 mins until crispy
2. To make your slaw - cut both your cabbages and your carrot into small strips
3. Add Mayo and Lime juice to the bowl and combine
4. To make your guac - scoop the contents of 2 avocadoes into a bowl add cubed onion and tomato, coriander, lime juice and olive oil and mix until smooth
5. To complete - take your mini tortilla spread your guac around it add your slaw and chickpeas on top and finish with a squeeze of lime and a sprinkle of coriander
